Support.

I want to thank all of my family and friends who are being so supportive of me lately. I am taking just two classes, so when I registered for them I had the idea that I would commit 6 hours a week toward class that I would have to be out of the house and then a couple hours a week toward homework at home. Oh how wrong I was. I will be doing so much reading, research, attending plays, (that I didn't know about) and more that is yet to come. My husband isn't happy about me going back, needless to say when I informed him it is mandatory for my theatre history class to attend plays some on and some off campus, that we will have to pay to attend, he was really not happy. I feel very interested in school. I guess one of the reasons is that most of the time I am home with my kids without adult conversation. I talk daily to my Mother in law, Mom, and Chastity. I text my sister daily.(she is the reason I even have a cell cause I ain't got no money) Another reason is I love to learn. I read just about anything I can get my hands on, which I believe is really going to help me the next 8 years. Any way I want to thank all of you for the verbal Go Angie's, you can do it's, and the texted Hooray's! I wish everyone supported each more in this world. Just imagine how great it could be.

Wordless wed.

Paula Deen's Sourcream muffins

2 cups of self rising flour
2 sticks of melted butter
1/2 pint of sour cream

Preheat oven to 350. Melt butter, blend in sour cream, stir in flour. Do not over mix, just get it all wet and blended. Again I used the ice cream scoop and plopped it into ungreased muffin pans. Bake for 20-30 minutes till starting to brown a little on top.

These are great to use as biscuits and go wonderful with chicken salad or soup!!!!

Home made tortillas!!!

4 cups of flour

2 teaspoons of salt

2 Tablespoons of shortening (I used bacon grease or you could use butter)

1 and 1/2 cups warm water


4 teaspoons baking powder


Mix all dry ingredients, cut in shortening, stir in water until well mixed may still be a little wet.

I used an ice cream scoop to scoop out perfect sized balls of dough and on a floured cutting board I rolled them out trying to keep them round and as thin as I could go.

Heat a heavy bottomed pan over med high heat and cook each tortilla till it bubbles a little, flip, and check for browning on that side and you my dear are a genius in the kitchen!!!

These are great for burritos, eggs, sandwiches, chicken salad, or even pbnj.

College on a budget.

I am now registered for classes that start tomorrow. I have decided to go part time because I have two kids in school who get off the bus in the afternoon and I have a two year old who will be staying with her Mamaw. I am blessed to not have to pay for childcare, because if I did I wouldn't be able to attend college. I am however worried about the extra gas money and making sure both of our cars are up and running. I'll take those situations as they come, and pray that as usual we slide through them. I got both of my classes on the same days of the week so I only have to drive out two days a week, and I will try to do any other errands ect. while I am already out. I will be keeping things posted periodically to let you know how things are going and if I find any other ways to save while doing this. I have got to come up with some quick cheap dinners so if anyone has any please send them to me. I can use all the help I can get right now! I had to buy five books for two classes and they cost 275.00 dollars.(that was used by the way, and I won't even buy a five dollar paperback for myself) However, my registration was on Monday and my first class starts on Thursday so not alot of time to find them cheaper, I just pray I can sell them back or maybe on ebay when this semester is over. I will get to regester for my fall classes months before hand so I hope to price shop for those books and get a better deal or rent. Hope everyone is having a great day.
